Tarragon chicken salad

  • 1 little gem lettuce 
  • Watercress 
  • Chicken breast
  • Juice of 1 lemon 
  • 4tbsp olive oil 
  • 2tbsp chopped tarragon
  • Salt and black pepper 

J      Or simply just use chicken breast. I have never tried tarragon before and thought that I should try something new.

First, wash, dry and shred the lettuce. Mix together with watercress and place it in a large salad bowl. Cut the avocados in half, remove the stones.

Slice the avocados and turn in lemon juice,draining off juice into a small jar. Add the oil to the jar and mix together. The chicken breasts would have been cooked previously season to your own taste. Leave it aside to cool and then shred the chicken and toss it into the salad bowl like a piece of art. Pour over the lemon and olive oil dressing and toss.

It’s ready to eat.
