Chicken and butter bean soup. 

As well as doing the green juice cleanse for the week. I thought that it might be best to at least have something to eat for dinner. It’s very light and I am sure it won’t feel like I have eaten anything (BONUS). 

I wanted to try something different with my soup this time, I usually just have my chicken soup with Sweetcorn but I wanted to add beans to it and checked online and found chicken and butter bean soup.


  • 500g Chicken breast skinless 
  • 400g butter bean 
  • Celery stick 
  • 2 red onions 
  • 3 cloves of garlic 
  • 2 inch Ginger 
  • Olive oil
  • 2 Knorr stock cube 
  • Salt
  • Black pepper
  • 1 tablespoon flour

I start of by frying the chicken not fully because you will have to put it back into the pot with the soup. I added a pinch of salt and God knows how much black pepper.

Take the chicken off and put it in a bowl. Know caramelise the onion, ginger and garlic, add a little bit more salt and pepper. 

Before frying the onion, ginger and garlic. Boil water put 500ml of water into a measuring jug and add the knorr stock cube. Back to the onion,it’s been carmalised add 1 tablespoon of flour, this will help thicken the soup. Gradually add the stock into the onions  and it will state to thicken up, take your time with this. The pot should be on low for a couple of minutes then to medium as you start to add more of the stock. 

All the stock should be in the pot. Add another 500ml of water and another knorr cube into the pot add the celery, cover and let boil for 10-15 until celery is soft. Leave soup to cool down as everything will be blended. 

Blend soup after its been cooled down, add oil to pot and then pour soup add chicken and butter bean and leave for 10 minutes. 

I forgot to add obviously season it to your liking. Although it may not look pretty it does taste good.
