It’s already that time of year autumn jumping into winter, so will be drinking a lot of broth and soup.
So today’s menu will be Thai broth, very warm, delicious and tasty. Everyone should have these staples at home. These three ingredients should be in everyone’s cupboard.
- Olive oil
- Black pepper
These ingredients that we are going to use are all fresh and most people if not everyone should have at home.
- Thai red curry
- Whole chicken
- Butternut squash
- Coconut milk
- 1 litre water
Put 1 litre of water in a pot, put the chicken in the pot add salt and pepper to your liking. Cut the butternut squash in half take out the seed with a spoon and then cut them in medium sized squares put them into the pot and cut your coriander thinly chuck that into the pot as well. Get your their red paste and dunk every thing into the pot as well, leave to cook for 1hour 20 minutes.
When the chicken is tender or cooked through take it out of the pot make sure to drain it of the broth. Put the chicken aside and get a masher and mash the squash in the broth which will also thicken the broth a little.
